This is a very unique variety, sparsely cultivated here in the UK – the Tennessee Oyster. This is a wild species of oyster originally native to Tennessee, comprising of large cups of buttercream cultured mushrooms, which can be fragile but make up for it with a meatiness which is unparalleled, making it a big hit with restaurants. Like the Pink Oyster, the shelf life is relatively short compared – but come packing massive flavour. We owe a big thanks to the originators, Mossy Creek Mushrooms, TN, who have sampled and developed this species under the brand name ‘Pathfinder’ over in the states,
